Nicchia – esCAMOtage

Our new gamble: from the same grapes and the same vineyard from the Moscato d’Asti docg is born, we obtain a totally different wine. Nicchia is a still and dry wine, which ferments and refines in barriques for more than six months. A short refinement, using old barrels, and not new ones, to give the wine a little something without tasting too much of wood. This wine is part of the association Aroma di un Territorio of which I am the president, it groups eight producers and we have written a strict guideline to regulate the production of this wine. The association’s guideline is the first, in Italy, totally forbidding the use of chemical weeding. The alcoholic content is 13%, it is perfect for the happy hour, with sushi, appetizers, fish, first dishes and poultry.
